Aiden Byrne, Head Chef of The Grill
The youngest chef to ever win a Michelin Star, Aiden Byrne joined
The Dorchester as Head Chef of The Grill in 2006 and has quickly won a loyal following for his ‘lightness of touch’ combined with unique combinations of flavours and stunning presentation. His seasonally-changing menu features signature dishes such as roasted Cornish scallops with white truffle & white chocolate risotto as well Aiden's personal interpretations of classic British dishes such as Cottage Pie, made with veal fillet and served in four different ways and for dessert, a modern take on the traditional bread & butter pudding.
Aiden joined The Dorchester from Danesfield House Hotel and Spa where he was the Executive Chef of the Oak Room and Orangery Restaurants. Prior to this, Aiden spent 2 years as the Head Chef of the Michelin-starred restaurant, Tom Aikens, one of London’s most critically acclaimed restaurants. A protégé of Chef Tom Aikens, Aiden had previously worked with him as a sous chef at Pied à Terre. Aiden has also worked at a number of other Michelin-starred establishments in Ireland and the UK, including 3 years as Head Chef at Adlards Restaurant in Norwich, where at the age of 22 he won a Michelin star.
At The Dorchester, Aiden has truly fulfilled his aims of making The Grill into a showcase for the best British produce and to shatter the myth that British cooking has to be heavy, rich and old-fashioned.
